For the first mountain outpost of the fast-growing Rakkan Ramen franchise, San Francisco studio keernsmith reimagined a generic retail shell within the Soaring Ranch shopping center as an intimate, flexible dining room rooted in the brand’s humble origins. Rather than accept the space’s existing high ceilings at face value, the design team drew on memories of Tokyo izakayas, where proximity and low ceiling heights create an atmosphere as warm and enveloping as a steaming bowl of ramen.
A simple walnut post-and-beam structure — sized to the practical dimensions of cooking and eating — organizes the plan, forming a functional threshold between the open kitchen and the dining room while setting the height and proportion for everything around it.
That single move yields two distinct ways to eat: counter seating close to the action, and cozy two-person booths for a quieter meal.
A stained plywood bench threads along the main dining area, giving the restaurant the flexibility to seat parties from a solo diner to a table of fourteen, while acoustic walnut paneling tempers the noise of a busy service and radiates a natural, textural warmth.
The material palette mirrors the restaurant’s own signature: an umami-rich, plant-based broth built from simple, well-chosen components. Off-the-shelf materials like plywood are handled with enough care to read as rich and considered, adding depth to the space without adding cost — a restraint that lets craft, not extravagance, carry the design.
