Sapling Restaurant Dalston

Transit Studio recently completed Sapling, a wine focused restaurant and larder in Dalston, London. The architects worked with the client to create an evocative concept about wine, exploring what a Dalston Terroir could be. Within the small shop unit the idea was to create an informal communal space with a range of seating types that celebrate the act of commensality. The central table defines the space, as a high table and communal bar, with slim banquettes that wrap around the perimeter. The idea was to intertwine the seating and service within the space, with the kitchen visible through a framed window to the rear.

Sapling Restaurant Dalston

We used a natural palette of materials that reference the local area, originally known as the Kings Lands, where Dalston Kingsland takes it’s name. These former hunting grounds of the King were originally oak forests, which were cut down to excavate the clay below to form bricks to meet London’s growth.

We used rough sawn oak timber to panel the lower level of the room, whilst above custom tiles pressed from reconstituted brick dust reflect light deep into the space in a range of soft tones. The surfaces throughout are formed from an extraordinary wooden terrazzo, a beautiful and tactile material, with a mix of timber from London plane trees, sycamore and walnut offcuts. The offcuts are a reused waste product from the furniture industry.
